Cantabrian Sea Anchovy Fillets, 80g. The anchovy fillets caught in the Cantabrian Sea are large and flavorful. They are very meaty, as these anchovies live in well-oxygenated and cold waters that require fattier tissues and have a typical pink color that turns tobacco-colored.

Features

The Cantabrian Sea overlooks the northern coast of Spain, in the area called FAO 27, and welcomes a variety of anchovies that differ from those found in other seas. The Cantabrian Sea, cold, rich in plankton and with strong currents, offers the best environmental conditions for anchovies which develop particular characteristics here. In order to survive the rigid temperatures of these waters, anchovies grow more and accumulate a greater reserve of fat.

Fishing for Cantabrian anchovies takes place between the months of April and June, when the anchovies have the best organoleptic characteristics. Fishing takes place in full respect of the sea and the marine fauna, and once they are caught our master salters carry out a careful selection and proceed with the salting process within 6 hours from the catch, in the nearby factories of Santona, in Spain.

XXL Delicius Anchovies are caught in that part of the sea between Galician coast (Spain) and Adour’s estuary, called Cantabrian sea. In those waters lives this selected anchovy, particularly appreciated of the fillets size and for the intense taste. We use only the Engraulis encrasicholus species and for this selection Delicius chooses only the anchovies caught from June to April, in order to guarantee the best product in terms of texture, compactness and sweetness of the fillets.

The idea is that of creating an innovative and different gift idea for food lovers.
